Most of my DVDs play just fine with all five channels. My latest on is
an EMI named "Libera". The front and rear channels play correctly but
there is no center channel. On the menu I selected 5.1 surround and the
display shows 3/2.1. Are there some DVDs that just don't have a center
channel?

I'm thinking there aren't too many, but there are some DVDs that don't
use a centre channel. Music DVDs, in particular, I would imagine. I
remember that the DVD-A of Neil Young's Greendale was in 4.1 (or 4.0,
can't remember).

My Terminator DVD(Yah, Ahrnold) is Dolby Digital Mono.

Haven't played it since getting 5.1. Will have to check it out again later.

2.1(3speaker) is L&R+SW. If your getting anything from the rears you
probably have some effects turned on.

All of my DVDs show 3/2.1 on the display.
